HOT SOUR CRABS

Ingredients:
600 g flower crabs
tapioca flour (for dusting)
Garnishing
1 stalk spring onion
1 sprig coriander leaves

Chop and combine (a)
1 tablespoon ginger
2 sprigs curry leaves
1 tablespoon shallots
1 tablespoon garlic
1 tablespoon taucu(soya paste)

Season dan combine (b)
2 tablespoon chilli sauce
2 tablespoon tomato sauce
2 tablespoon lime juice
2 tablespoon sugar
1 tablespoon fish sauce
salt,pepper
1/2 cup water
1 teaspoon anchovies granules

Method:
Cut crabs (halves) and toss with flour.
Fry the crabs.Put aside.
Fry chopped ingredients.(a) Add seasoning .
Add sauces,water.(b)
Stir and simmer. Add crabs.Simmer until gravy thickens.
Garnish as desire.
