
Ingredients
12 chicken drumsticks
1/3 cup(80 ml) lemon juice
4 cloves garlic,crushed
1 tablespoon grated fresh ginger
1/2 cup(125 g) tandoori paste
1 tablespoon ground cumin
1/4 teaspoon paprika
1 pinch of chilli powder
1 cup(250 ml)plain yoghurt
1 teaspoon salt
lemon wedges to serve
Method
Remove the skin from the chicken and make a couple of deep cuts on each side of the drumsticks.
Brush flesh with 3/4 of the lemon juice and marinate for 30 minutes.
Place garlic,ginger,tandoori paste,ground cumin, paprika,chilli powder,yoghurt,salt and the remaining lemon juice in a bowl and mix together.
Place drumsticks in a dish and spread with yoghurt mixture,cover with some plastic wrap and refrigerate for several hours/overnight.
Preheat oven to gas 4.
Place drumsticks on a wire rack,bake until tender.
Serve with lemon wedges/rice/naan bread.
Tips
To make your own tandoori paste.
1/2 onion
4 cloves garlic
1 tablespoon grated ginger
3 teaspoon coriander seeds
1 tablespoon cumin seeds
1 tablespoon lemon juice
1 teaspoon salt
Process the mixture in a food processor.
Combine these with 1/4 teaspoon paprika
1 pinch of chilli powder
1 cup plain yoghurt
few drops of red food colouring
